In just 45 minutes, you can have this ground beef keto Mexican casserole on your table. Ground beef is combined with diced peppers, onions, and jalapenos. Then it's all mixed together with a creamy spicy sauce and plenty of cheese! It is a comfort food casserole that will make your entire family happy!

Did you know that red peppers are simply green peppers that are allowed to ripen longer? Another fun fact is that yellow peppers are what you get when you harvest the pepper in the middle of the ripening process. Yep, same plant with three different colors depending on how long they're left to ripen! There are other differences than color though. Green peppers are more bitter while red peppers are sweeter. Red peppers also contain more beta-carotene and more vitamin A and C than green peppers. I added just enough onion to give the dish great flavor and to keep it low carb. Diced jalapenos give the casserole a good kick of heat. If you want this hotter, you could add even more jalapenos!

This recipe combines salsa, cottage cheese, and sour cream to create a creamy delicious sauce. Chili powder and cumin are all that is needed to give the sauce some flavor and to kick up the heat a bit. I chose to use a combination of shredded colby jack and cheddar cheese. You can substitute a variety of cheeses for this casserole if you'd like. Gouda, mozzarella, Monterey jack, swiss, or even pepper jack cheese would work great with this dish. I often choose to top casseroles with cheddar cheese because it looks so beautiful when melted and browned in the oven.🧀

This casserole comes together quickly and easily; but there are a few things you can do to ensure it comes out perfectly. First, after your ground beef and vegetables are done, make sure you drain the mixture well. This will keep your casserole from becoming runny.  Second, I suggest shredding your own cheese. Pre-shredded cheeses often contain additional ingredients such as cellulose and potato starch. Because of this, these cheeses often don't melt as well and don't combine as well when making sauces. Third, you can adjust the heat level to your taste preference by adjusting the amount of jalapenos and chili powder you choose to use. This casserole has a medium spice level. Last, you can use any number of optional toppings for this casserole. Top with additional cheese or sour cream or use some fresh diced tomatoes or black olives. Hmmm…guacamole, sliced avocados, or pickled jalapenos would be great toppings as well!

Ingredients

  • Avocado oil spray
  • 2 pounds ground beef
  • 3 tablespoons diced green pepper
  • 3 tablespoons diced red pepper
  • 3 tablespoons diced yellow onion
  • 4 ounce can diced jalapenos, drained
  • ¼ teaspoon salt
  • ¼ teaspoon pepper
  • 1 cup salsa
  • ¾ cup cottage cheese
  • ¾ cup sour cream
  • 1 tablespoon chili powder
  • 1 teaspoon cumin
  • 2 cups shredded colby jack cheese
  • ½ cup shredded cheddar cheese
  • Optional toppings: additional shredded cheese, additional sour cream, diced tomatoes, sliced black olives

Instructions

    1. Pre-heat oven to 375 degrees.

    2. Spray a 13x9 inch baking dish with avocado oil spray. Set aside.

    3. In a large skillet over medium high heat, add ground beef, diced peppers, diced onions, jalapenos, salt and pepper.

    4. Cook until ground beef is no longer pink, breaking up into small pieces as it cooks. Drain well.

    5. While beef is cooking, in a medium mixing bowl, add salsa, cottage cheese, sour cream, chili powder, and cumin. Stir to combine ingredients.

    6. Add salsa mixture to drained ground beef mixture. Stir to combine. Heat over medium high heat until mixture is heated through. Add shredded colby jack cheese. Stir and heat until cheese is melted.

    7. Add ground beef mixture to prepared 13x9 inch pan.

    8. Sprinkle shredded cheddar cheese on top of casserole.

    9. Bake for 30 minutes or until casserole is heated through.

    10. Top with additional shredded cheese, additional sour cream, diced tomatoes, and sliced black olives if desired.

I made this casserole with 80/20 ground beef and nutritional data was obtained using that mixture.
